Buzz Hofford, general manager of Bon Appétit, gave a presentation at the Society for College and University Planning regional conference in Los Angeles. Hofford's talk, titled, "Trends in Student Dining Venues: A Healthy Experience," explored how campus eating habits are slowly changing with an increasing interest in nutrition, healthy lifestyles and environmental sustainability. Topics included decreasing energy use, urban agriculture, sustainable food sourcing, healthy menu options and nutrient recovery.
